Information

In times when globalized food tastes the same in every corner of the world, when we give up and let die the tastes of the previous centuries, when the bold adjective „ecological” looses its positive meaning, there is only one man to bring us hope. It is because his „note-by-note” method is going to change completely the way we look at culinary art. His name is Hervé and he is legendary French scientists, the father of molecular cuisine. Still, if Paris seems too far, there is always Warsaw restaurant Senses you can pop in to taste the unusual dishes. The scientists say, that we will forget the taste of real food in the near future. Not only because it is more and more processed. The worlds’ human population is increasing and the water supply is decreasing. The problem is even more complicated when we think of raising important but delicate animal welfare issues. But here „note-by-note” method brings the solution for the next generations. It allows us to create dishes as composing music - by putting together „notes” out of the library of taste components. From the other hand, „note-by-note” method creates completely new opportunities for an ingenious chef’s imagination. It allows to work with the basic matter of taste and odour. No methods of preparing food restrict a chef and he can form his ideas into anything. Entering Senses restaurant guests enter completely new culinary world. The menu created by chef Camastra is the first ever menu composed of „note-by-note” dishes.

Senses restaurant is the Polish culinary window to the world with Andrea Camastra as a host. The place, despite its high-tech equipment and its own food sensory lab, is all about natural, real and complete tasting experience. Flavours come from the best natural products that are found and approved by Andrea himself. Most Polish products come from the farm in Kolbuszowa. The rest – come from all over the world – Italy, Switzerland, Spain, Japan. Andrea Camastra puts emphasis on light and healthy dishes. It is also the core principle of „note-by-note” cuisine, that the Senses restaurant is entirely devoted to.
